Vegan Pizza Recipe- Beautiful Healthy Pizza

I was so honored to be a guest on for the fabulous Chef AJ on Chef AJ Live. I am even more honored to call her my friend. I made this pizza when I stayed at her house in California, and she liked it so much, she asked me to contribute my recipe to her wonderful new book, Own Your Health. Today, I am making it with a twist–I decorate the top with a beautiful floral scene and show you how you can too. Here’s the recipe:
10 ounces riced cauliflower, cooked (or thawed from frozen)
1 8 ounce roasted sweet potato, white flesh preferred
1 15-ounce can cannellini beans, drained
3 cups rolled oats

Creamy Garlic Pizza Sauce:
Oil free hummus

Toppings: Red, orange, and yellow bell peppers, cut into flower shapes. Purple onion cut with a mandolin. Green onions, black olives, spinach, and grape tomatoes, arranged into the shapes of flowers and butterflies.

Combine all the crust ingredients into the food processor fitted with the S-blade and process until well blended. Form into pizza crust shape and place on a silicone baking mat. Bake at 400 degrees F for 15 minutes, then allow to cool, flip, and bake 10 more minutes. Be careful, crust will be sticky! Slather generously with your favorite oil-free hummus and top with beautiful vegetable flowers and greenery. Be creative and do your own thing–the results are always beautiful and delicious. This is a great activity for kids to seniors.

Once your top is decorated, pop it back in the oven for 10 more minutes to bake the toppings. Enjoy your beautiful artistry!
