Vegan Sushi
4 c long-grained brown rice
5 c water
1 c rice vinegar
1 c julienned cucumber
1 c grated carrot
1 large sweet potato (I prefer Hannah yam)
10 sheets sushi nori
Add 1 c of rice vinegar to the warm rice. Spread a thin layer of warm rice over all of the nori except 1 inch at the bottom and the top. Add a row of cucumber, carrot, and sweet potato. Wet the ends of the nori and roll like a sleeping bag. Cut it into bite sized pieces or eat it like a sushi burrito!
